This week’s superfood is the Goji Berry!
Goji berries are grown in China and have a sweet and slightly tart taste. The berries are typically consumed dried and are known for their use in Chinese Medicine. Some of the benefits Goji Berries offer are:
Antioxidants, vitamin C, and zinc which are important for building the immune system.
Goji berries may help fight off cancer cells, tumor growths, and remove toxins from the body, due to containing zeaxanthin and Vitamin C precursors (Levy).
“They contain 500 times the amount of vitamin C by weight than oranges,” (Goji-Berries).
3 tablespoons of goji berries contain 4 grams of protein!
Contains 11 amino acids that the body cannot produce on its own.
Cartenoids are also found in this berry which can help aid skin and vision health.
May help with conditions such as hyperglycemia, hypertension, and iron deficiency.
To get the benefits of goji berries add them too:
Trail mixes
On top of gluten free bread with nut butter
Wraps or quinoa bowls
Smoothies
Salads
Or just eat them by themselves!
Recipe: Overnight Chia Seed Pudding
*2 TBSP of Chia Seeds (BRAND: Simply Nature - Aldi)
*1/2 cup of Almond Milk (BRAND: Simply Nature - Aldi)
*1 TBSP of Honey OR Maple Syrup (BRAND: ChocZero - ORGANIQUE or online) *Keep in mind, if you are using regular honey or maple syrup, this may go against your food sensitivity testing and recommended sugar intake per meal!
Instructions: Mix all together and refrigerate overnight to enjoy for breakfast in the morning! Top with Goji Berries, Raspberries, Blueberries, etc.!
