The top is slightly golden while the inside is soft and loaded with a sweet berry assortment!
Ingredients:
2 cups gluten-free old fashioned rolled oats
¾ cup sliced almonds
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon pink Himalayan salt
1 ¾ cups milk (dairy or dairy-free)
¼ cup honey or maple syrup
2 large eggs
2 tablespoons melted, unsalted butter or coconut oil
2 teaspoons vanilla extract
2 ½ cups frozen mixed berries
Instructions:
Preheat oven to 375°F.
Grease a 9-inch square baking dish with butter or coconut oil.
Whisk together the dry ingredients (oats, half of the almonds, cinnamon, baking soda and salt) in a large bowl.
Whisk together the wet ingredients (milk, honey or maple syrup, eggs, melted butter or coconut oil and vanilla extract) in a medium bowl.
Stir the milk mixture into the dry ingredients.
Arrange some of the berries in the bottom of the baking dish.
Pour the oat/milk mixture into the prepared baking dish and spread into an even layer.
Sprinkle remaining berries and almonds on top.
Bake in a 375°F oven for about 35 minutes.
Let the baked berry oatmeal rest for about 5 minutes, and then serve.
