Southwest Chicken Salad

Easy and delicious meal prep recipe!

Ingredients:

  • 1 cup roasted corn (can remove or replace for food sensitivities) & chili powder

  • 1/4 diced red onion

  • 1 cup black beans

  • 1 tbsp taco seasoning

  • 3 cups shredded chicken

  • 1/2 cup cashew milk yogurt

  • 1/3 cup cilantro

  • 1 avocado

  • 1 lime squeezed

  • 1 teaspoon pink Himalayan sea salt

Directions:

  • Mix all ingredients together and enjoy with chips, veggies or on a salad!
