Enchilada Casserole

Grain-free and easy dinner recipe!

Ingredients:

  • 2 pounds shredded chicken

  • 1 diced red bell pepper

  • 3 cloves minced garlic

  • Siete taco seasoning packet

  • Siete enchilada sauce

  • 8 oz can of green chiles

  • Siete cassava tortillas

  • Primal Kitchen queso

  • Avocado oil

  • Cilantro

  • Black olives

  • Guacamole

Instructions:

  • Preheat oven to 350 degrees Fahrenheit.

  • Add avocado oil, peppers and garlic to pan. Saute on medium/high heat for about 3 minutes.

  • Turn heat to medium/low, then add shredded chicken, green chiles and seasoning packet to pan.

  • Combine all ingredients and cook for 8 minutes.

  • Add avocado oil and 1/4 of enchilada sauce to casserole dish.

  • Add about 3 tbsp of chicken mixture to each tortilla. Roll it up, and add to the dish.

  • Top with remaining enchilada sauce and queso.

  • Bake for 25 minutes.

  • Top with cilantro and olives.

  • Serve with guacamole and ENJOY!
