Grain-free and easy dinner recipe!
Ingredients:
2 pounds shredded chicken
1 diced red bell pepper
3 cloves minced garlic
Siete taco seasoning packet
Siete enchilada sauce
8 oz can of green chiles
Siete cassava tortillas
Primal Kitchen queso
Avocado oil
Cilantro
Black olives
Guacamole
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Add avocado oil, peppers and garlic to pan. Saute on medium/high heat for about 3 minutes.
Turn heat to medium/low, then add shredded chicken, green chiles and seasoning packet to pan.
Combine all ingredients and cook for 8 minutes.
Add avocado oil and 1/4 of enchilada sauce to casserole dish.
Add about 3 tbsp of chicken mixture to each tortilla. Roll it up, and add to the dish.
Top with remaining enchilada sauce and queso.
Bake for 25 minutes.
Top with cilantro and olives.
Serve with guacamole and ENJOY!
