Ingredients:
*1 pint Cherry Tomatoes
*2 Bell Peppers (chopped)
*1 Zucchini (chopped)
*Avocado Oil
*Salt & Pepper
*Italian Seasoning (to taste)
*1/2 tsp Minced Garlic
*8 oz Block of Feta
*1/2 box Tolerant Noodles
*Reserved pasta water
*Fresh basil (optional for topping)
Instructions:
*Wash, cut and prepare vegetables. Preheat oven to 400 degrees Fahrenheit.
*In a baking dish (9x13), add tomatoes, peppers and zucchini. Drizzle generously with olive oil and season to taste with salt, pepper and dried basil or Italian seasoning.
*Add fresh block of feta directly in the middle of the vegetables. Make sure it’s flush with the dish. Add a drizzle more of olive oil and seasoning on top of the feta. Spread the garlic on top of the feta.
*Bake at 400 degrees Fahrenheit for 35 minutes. Vegetables should be fully cooked and sizzling. You can leave in for another 5 minutes if desired.
*During this time, cook pasta of your choice. Make sure to keep some pasta water.
*When vegetables are cooked, remove from the oven and immediately press down on the feta and mix everything together. Add pasta and a splash of pasta water. Mix well until the creamy feta, vegetables and pasta are all throughly mixed together.
*Serve with fresh basil or more dried basil and enjoy!
