Blueberry Lemon Power Bites

These power bites are a refreshing spring + summer version of our favorite homemade snack – the energy ball!



Ingredients:

  • 1 cup raw cashews

  • ½ cup pitted dates

  • ¼ cup blueberries (dried)

  • ¾ cup old-fashioned rolled oats

  • 2 tsp vanilla or almond extract

  • 2 tbsps raw honey or pure maple syrup

  • 1 tbsp fresh lemon zest

  • 1 tbsp fresh lemon juice

  • Optional: Pinch of pink Himalayan sea salt





Instructions:

  1. Add your cashews, dates and dried blueberries to a food processor, and process until finely chopped.

  2. Add in the oats, vanilla, honey or maple syrup, lemon zest, lemon juice and a tiny pinch of sea salt if using.

  3. Process until well combined into a thick, sticky paste. If it's too dry, add a teaspoon or two of warm water, then process again.

  4. Take equal spoonfuls and form small balls into your palms. A cookie scoop works really well for this step.

  5. These will likely be sticky, and the texture will improve after refrigerating for a few hours.

  6. Refrigerate in a sealed container for up to 1 week or freeze for a month.

  7. Enjoy!
