These power bites are a refreshing spring + summer version of our favorite homemade snack – the energy ball!
Ingredients:
1 cup raw cashews
½ cup pitted dates
¼ cup blueberries (dried)
¾ cup old-fashioned rolled oats
2 tsp vanilla or almond extract
2 tbsps raw honey or pure maple syrup
1 tbsp fresh lemon zest
1 tbsp fresh lemon juice
Optional: Pinch of pink Himalayan sea salt
Instructions:
Add your cashews, dates and dried blueberries to a food processor, and process until finely chopped.
Add in the oats, vanilla, honey or maple syrup, lemon zest, lemon juice and a tiny pinch of sea salt if using.
Process until well combined into a thick, sticky paste. If it's too dry, add a teaspoon or two of warm water, then process again.
Take equal spoonfuls and form small balls into your palms. A cookie scoop works really well for this step.
These will likely be sticky, and the texture will improve after refrigerating for a few hours.
Refrigerate in a sealed container for up to 1 week or freeze for a month.
