Bridgette's White Chicken Chili
*Ingredients:
4-5 Chicken Breasts (BRAND: Simply Nature - Aldi) sauteed in avocado or coconut oil (BRAND: Simply Nature - Aldi) (season the chicken breast with salt, pepper, cumin, and garlic powder) ~ dice them after they are fully cooked (Spices - BRAND: Simply Nature - Aldi)
8 full stalks of celery diced (BRAND: Tanimura & Antle - Aldi)
2 big white onions diced (BRAND: Unknown - Aldi)
2 green poblano peppers or jalapeno peppers diced (sometimes I don’t add if I don’t have them) (BRAND: In produce section - Aldi)
1 cup fresh cilantro (BRAND: Tanimura & Antle - Aldi)
2 diced/seasoned avocados (BRAND: Organic Avoterra - Aldi)
2 cans Great Northern Beans drained (I’ve also used black beans or pinto beans) (BRAND: Wild Harvest or Field Day - Golden Harvest, Trigs or any health food store)
1 TBSP Southwest Seasoning (BRAND: Penzey's - online or store in Appleton)
1 TBSP Cumin (BRAND: Field Day - Golden Harvest or any health food store)
1 tsp Himalayan Pink Salt (BRAND: Foods Alive - ORGANIQUE or online)
½ tsp Pepper (BRAND: Thrive Market - Thrive Market online)
½ tsp Garlic Powder (BRAND: Simply Nature - Aldi)
3 boxes Chicken Bone Broth (BRAND: Simply Nature - Aldi)
3 cans Canned Full Fat Coconut Cream (BRAND: Field Day, Wild Harvest, or Native Forest - Golden Harvest or any health food store)
2 fresh limes for soup and 1 Lime to squeeze onto diced avocados (BRAND: Unknown but in a large bag - Aldi)
Tortilla Chips (BRAND: Siete - Golden Harvest, ORGANIQUE, health food stores or online)
Instructions:
Sauté veggies for 3-4 minutes
Add chicken and seasoning and sauté for 2 more minutes
Add the great northern beans and mix together
Next add bone broth and cans of full fat coconut cream and fresh squeezed lime (if you need more liquid, you can add more broth, some unsweetened almond milk, or another can of full fat coconut cream)
Upon serving: add some diced avocados and fresh cilantro
Squeeze fresh lime on top
Siete tortilla chips are a great side to this soup
