Bridgette's Garbonzo Bean Salad

An excellent side dish or lunch option!

Ingredients:

3 tbsp of Avocado Oil (BRAND: Simply Nature - Aldi)

3 tbsp of Lemon Juice (BRAND: Santa Cruz - Golden Harvest, online or other health food stores)

1 Garlic Clove, pressed or minced (BRAND: Stonemill - Aldi)

1/2 tsp of Himalayan Pink Salt, or to taste (BRAND: Foods Alive - ORGANIQUE or online)

1/8 tsp Black Pepper (BRAND: Thrive Market - Thrive Market Online)

1 1/2 cups Cherry Tomatoes, halved (BRAND: Sunset - Aldi)

1 English Cucumber, halved and sliced (BRAND: Unknown - Aldi)

15 oz Garbanzo Beans, drained, rinsed (BRAND: Field Day - Golden Harvest, online or other health food stores)

1/2 medium Red Onion, thinly sliced (BRAND: Purple bag of 6 - Aldi)

1 Avocado, sliced (BRAND: Organic Avoterra - Aldi)

1/4 cup Cilantro, chopped (BRAND: Tanimura & Antle - Aldi)

4 oz Feta Cheese (BRAND: Emporium - Aldi)
