A fun fall treat!
Ingredients:
2 sweet potatoes, chopped
1 cauliflower, chopped
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tbsp olive oil
1/2 tsp salt
1/2 cup cilantro, chopped
1/2 cup cashews
Dressing:
1 tsp salt
1 garlic clove
2 tbsp nutritional yeast, optional
1/3 cup plant milk
Instructions:
Preheat your oven to 200 degrees. Line a baking tray with baking paper.
Add the sweet potatoes, cauliflower, onion power garlic powder, paprika, avocado oil and salt to a tray. Toss to combine. Bake in the oven for 30 minutes until the veggies are golden- tossing half way.
Make the dressing by adding all of the ingredients to a blender and blending until smooth.
Once removed from the oven, top with cilantro, cashews and dressing.
