A quick and easy side dish!

Ingredients:
1 large Cauliflower, cut into small florets (BRAND: Tanimura & Antle - Aldi)
1 cup Coconut Cream (BRAND: Native Forest - Golden Harvest or health food store)
1/2 cup Goat Cheese (BRAND: Emporium - Aldi)
1 1/2 tsp. Dijon Mustard (BRAND: Woodstock - Golden Harvest or health food store)
1 1/2 cups Cheddar Cheese (BRAND: Lyn's Dairy Farm - Golden Harvest) *Dairy free option - Follow Your Heart Brand
1/2 tsp. Black Pepper (BRAND: Thrive - Thrive Market Online)
1 tsp. Pink Himalayan Salt (BRAND: Foods Alive - Organique, online or other health food store)
1/8 tsp. Garlic Powder (BRAND: Simply Nature - Aldi)
Ghee (BRAND: 4th & Heart Ghee Clarified Butter (Himalayan Pink Salt Grass Fed) - Golden Harvest or other health food store)
*For more of a cheese flavor, sprinkle Nutritional Yeast on top (BRAND: Foods Alive - Organique or online)
Directions:
*Preheat oven to 375 degrees F and bring pot of water to a boil
*Cook the cauliflower in the boiling water until slightly tender (about 5 minutes). Drain the cauliflower and pat dry with paper towels.
*Grease an 8x8 pan with ghee and place dried cauliflower in pan.
*In a saucepan over medium high heat, mix together cheese and mustard until smooth.
*Stir in the cheese, salt, pepper and garlic powder and mix together until cheese just starts to melt.
*Pour mixture over the cauliflower and stir. Top with any remaining cheese and bake for 10-15 minutes.
