Chipotle Chicken Burrito Bowl

Chipotle chicken burrito bowls are EXCELLENT for meal prep! Simply add guacamole and Forager cashew milk yogurt immediately before serving!

Ingredients:

*2 cups cooked brown rice (sub quinoa)

*1 (15oz.) black beans, drained and rinsed if using canned

*1/2 cup shredded, dairy-free, sharp cheddar cheese

*4 cups shredded lettuce

*1 cup natural salsa

*1/2 cup plain cashew milk yogurt

*1 large, ripe avocado

*1 Tbsp freshly squeezed lemon juice

*1 Tbsp avocado oil

*Small handful of fresh cilantro and chopped lime wedges, to serve




For the chipotle chicken:

*1-1/2 lbs boneless, skinless chicken breasts, cut into large pieces

*2-3 chipotle peppers in adobo sauce

*Juice of one fresh lime

*1 tsp onion powder

*1/2 tsp garlic powder

*1 tsp ground cumin

*1 Tbsp avocado oil

*1/4 tsp black pepper, or to taste

*1/2 tsp sea salt, or to taste


Instructions:

*Combine together and enjoy!
