Chocolate Quinoa Crunch Bars

Looking to get more plant-based protein into your routine? Look no further than these 3-ingredient Chocolate Quinoa Crunch Bars!

Ingredients:

  • 1 cup chocolate chips

  • 1 tbsp coconut oil, melted

  • 1 cup raw quinoa

Directions:

  • Place quinoa in a pan on the stove over medium-high heat. Cook for 3-4 minutes, stirring constantly. Take off heat when the quinoa starts making popping noises (like popcorn).

  • Add chocolate and 1 tbsp coconut oil to another pot over medium-high heat. Stir until completely melted.

  • Mix the quinoa and melted chocolate together until evenly coated.

  • Line a 9x5 pan with parchment paper, pour in the mixture and completely flatten. Freeze for 1 hour. Cut into slices and enjoy!
