Crispy Buffalo Chicken Salad

A delicious salad idea!

Ingredients:

  • 1 cup arugula

  • 1/2 cup roasted sweet potatoes

  • 3-5 gluten-free chicken tenders

  • 1 slice red onion

  • 2 slices turkey bacon

  • Dressing: 1 tbsp dairy-free sour cream, 1 tbsp vegenaise, 1 clove garlic, 1-2 tbsp water, salt, pepper and onion powder

Instructions:

1. Preheat your air fryer to 400 degrees Fahrenheit.

2. Add the turkey bacon, sweet potatoes and chicken in the air fryer until fully cooked and crispy. Set aside. Cook the sweet potatoes last so they are the warmest when building the salad.

3. While the turkey bacon, sweet potatoes and chicken are cooking, add the arugula, red onion and turkey bacon to a cutting board.

4. Chop into fine pieces.

5. Add the arugula, bacon and onion into a bowl.

6. Remove the chicken tenders from the air fryer and toss with buffalo sauce.

7. Top the salad with roasted potatoes and crispy gluten-free chicken tenders.

8. Drizzle with dressing.
