Crockpot Creamy Southwest Chicken Chili

A staff favorite! Packed with flavor and incredibly easy! Throw it all in a crockpot on high for 4 hours, or low for 6 hours, and dinner is served!

Ingredients:

*2-3 Chicken Breasts (BRAND: Kirkwood - Aldi)

*1 Red Onion (diced) (BRAND: Unknown - Aldi) *Bag of 6

*1 Bell Pepper (diced) (BRAND: Sunset - Aldi)

*1 can Black Beans (rinsed and drained) (BRAND: Simply Nature - Aldi)

* 2 cups Chicken Broth (BRAND: Simply Nature - Aldi)

*1 can Tomatoes (undrained) (BRAND: Field Day - Golden Harvest)

*8 oz Cream Cheese (BRAND: Kite Hill - Golden Harvest)

*1 tbsp Chili Powder (BRAND: FreshJax - Organique)


*1 tbsp Garlic Powder (BRAND: Simply Nature - Aldi)

*1 tsp Cumin (BRAND: Thrive Market - Thrive Market online)


Toppings Ingredients:

*Lime Tortilla Chips (BRAND: Siete - Golden Harvest or Organique)

*Avocado (BRAND: Organic Avoterra - Aldi)

*Green Onions (BRAND: Tanimura & Antle - Aldi)

*Dairy-Free Cheese (BRAND: Follow Your Heart - Golden Harvest or Organique)


Instructions:

Step 1: Place the chicken breasts at the bottom of a crockpot, and add the diced red onion, bell pepper, black beans and tomatoes.

Step 2: Evenly sprinkle the spices on top, then add chicken broth.

Step 3: Cover and slow cook for 4 hours on high or 6 hours on low.

Step 4: When you are finished cooking, remove the chicken breasts and shred them with forks. Add the chicken back into the soup.

Step 5: Ladle about 1 cup of chicken broth into a medium-sized bowl. Add cream cheese and whisk until well combined (this will prevent the cream cheese from curdling in the soup).

Step 6: Stir the soup so everything is well combined, add your toppings and ENJOY!
