A gluten free, paleo dinner!
Ingredients:
*1 tbs Coconut Oil (BRAND: Simply Nature - Aldi)
*1 lb Boneless Skinless Chicken Thighs (BRAND: Kirkwood - Aldi)
*1/2 large red onion, chopped (BRAND: Unknown - Aldi) *Purple bag at Aldi
*3 cloves of Garlic, minced (BRAND: Little Salad Bar - Aldi)
*3 large stalk of Celery, chopped (BRAND: Tanimura & Antle - Aldi)
*4 large Carrots, chopped (BRAND: Unknown - Aldi) *Bag at Aldi
*4 oz can of Fire Roasted Chiles (BRAND: Wild Harvest - Trigs, Golden Harvest and other health food stores)
*28 oz can of Diced Tomatoes, juiced included (BRAND: Field Day - Golden Harvest or other health food stores)
*2 cartons of Chicken Broth (32 oz each) (BRAND: Simply Nature - Aldi)
*1 heaping tbs of Chili Powder (BRAND: FreshJax - Organique or online)
*1 tsp Cumin (BRAND: Simply Nature - Aldi)
*2 tsp Garlic Powder (BRAND: Simply Nature - Aldi)
*Pink Himalayan Sea Salt (to taste) (BRAND: Wild - Organique or online)
*Pepper (to taste) (BRAND: Field Day - Golden Harvest or other health food stores)
*4 cups of Spinach (BRAND: Simply Nature - Aldi)
Toppings: (pick and choose the best for you)
*Dairy Free Sour Cream (BRAND: Forager - Golden Harvest or other health food stores)
*Dairy Free Cheddar Cheese (BRAND: Follow Your Heart - Golden Harvest or other health food stores)
*Scallions (BRAND: Tanimura & Antle - Aldi)
*Tortilla Strips (BRAND: Siete - Golden Harvest or other health food stores)
*Lime (BRAND: Unknown - Aldi) *Look for bag
*Avocado (BRAND: Avoterra Organics - Aldi)
Instructions:
*In a large soup pot, heat up your coconut oil over medium heat until it melts and coats the bottom of the pot.
*Add in your chopped onion and your minced garlic. Allow the onions to sweat and brown with the garlic until both become fragrant and the onions are slightly translucent.
*Cut up your chicken thighs into bite sized pieces and add them to your pot to brown.
*Add in your chili powder, cumin, salt, pepper, and granulated garlic. Stir to coat the chicken.
*Once your chicken is browned, add in your celery and carrots. Stir together until the spices slightly color your entire mixture.
*Add in your fire roasted chiles and your can of tomatoes (including the juices!) Stir.
*Add in your chicken broth, stir together. Bring the pot to a boil and then turn it down and allow it to simmer for at least 30 minutes.
*Once your soup has been simmering for 30 minutes, add in your corn tortillas and allow your soup to simmer for at least an additional 15 minutes.
*tir in your spinach. Your spinach will wilt as you stir it in. You're now ready to fiesta!
*Ladle out your bowl and top it with your desired toppings!
