MEET THE CHEF: GRETA
Greta first came to ORGANIQUE as a patient, where she saw remarkable results in the Nutrition Response Testing Program and the Holistic Mental Wellness Program. She was able to find answers and solutions to her health issues when multiple doctor visits could not. Inspired, she chose to come on board to be a part of the team here at ORGANIQUE. Greta enjoys camping, baking and spending time with her friends and family. She brings creativity to every single meal and loves to make healthy versions of her favorite foods to share with others.

Paleo and Low Sugar Cookies (Serves 15)
Wet Ingredients
¼ cup of Almond Butter (Brand: Simply Nature - Aldi)
2 tablespoons of Coconut Oil (Brand: Simply Nature - Aldi)
1 ½ tablespoon of Flax Seed (Brand: Simply Nature - Aldi)
1 teaspoon of Vanilla Stevia (Brand: SweetLeaf - ORGANIQUE or online)
⅓ cup of White Chocolate Chips (Brand: ChocZero - ORGANIQUE or online)





Dry Ingredients
1 cup of Almond Flour (Brand: Anthony's - ORGANIQUE or online)
1 tablespoon of Coconut Flour (Brand: Anthony's - ORGANIQUE or online)
¼ cup of Xylitol (Brand: Anthony's - ORGANIQUE or online)
1 teaspoon of Baking Soda (Brand: Field Day - Golden Harvest or Wild Berry)




Directions
Preheat the oven to 375 and place parchment paper on a baking sheet
Mix your flax and water to create a flax egg and set aside (HOW TO: 1 egg = 1 tbsp of Flax Seeds/Meal combined with 2.5 tbsp of water)
In a large bowl combine almond flour, coconut flour, xylitol, and baking soda stir until evenly mixed
In a pan on the stove add your almond butter and coconut oil. Heat on low until it is melted but be careful not to burn the almond butter. Turn off the heat and mix in your vanilla stevia and flax egg. Mix everything evenly.
Pour almond butter mixture into the bowl with your dry ingredients. Mix everything in to form a dough.
Add in your white chocolate chips
Take a small handful of dough and roll it into balls. It should make about 15 cookies. Once on the pan gently press on them until they slightly flatten and form more of a circle. Bake for 15 minutes until edges are slightly golden and allow to cool before serving!
