Servings: 16 Brownies
Dry Ingredients
¾ cup of Almond Flour (BRAND: Anthony's - ORGANIQUE or online)
2 tablespoons of Coconut Flour (BRAND: Anthony's - ORGANIQUE or online)
½ cup of Cocoa Powder (BRAND: Anthony's - ORGANIQUE or online)
½ cup plus 2 tablespoons of Xylitol (BRAND: Anthony's - ORGANIQUE or online)
½ teaspoon of Baking Soda (BRAND: Field Day - Golden Harvest or other health food stores)
1 teaspoon of Baking Powder (BRAND: Field Day - Golden Harvest or other health food stores)
Wet Ingredients:
2 tablespoons of Flax mixed with 2 tablespoons of Water and set aside (BRAND: Simply Nature - Aldi)
2 tablespoons of Coconut Oil (BRAND: Simply Nature - Aldi)
4 tablespoons of Dark Chocolate Hazelnut Spread, plus more for topping (BRAND: ChocZero - ORGANIQUE or online)
½ cup of Almond Milk (BRAND: Thrive Market - Thrive Market online)
1 cup of Mint White Chocolate Chips (BRAND: ChocZero - ORGANIQUE or online)
Directions:
Preheat the oven to 375 degrees
Lightly oil a glass dish and press a sheet of parchment paper inside (I use an 11x 7x15 inch dish). Oil the parchment paper as well making sure to cover the sides of the dish.
In a large bowl, combine all the dry ingredients and mix until combined.
In a small frying pan melt the coconut oil and 4 tablespoons of hazelnut spread on low heat stirring consistently until melted.
In a separate bowl combine the flax mixture, and all of the other wet ingredients except for the mint chips.
Add this mixture to the dry ingredients and stir until everything is well combined.
Stir in the mint chips and if needed a few more splashes of almond milk if the batter is excessively thick.
Spread the batter evenly into the dish.
Place dish in the oven and bake for 40 minutes or until the edges of the batter are firm while still having a fudgy base.
Allow the brownies to cool and place them in the fridge overnight to allow them better hold their shape.
In the morning frost the brownies with Choc Zero’s Dark Hazelnut Spread, cut them into squares, and serve!
Notes:
These brownies have a fudge texture so refrigerating them overnight helps them hold together better when serving.
An additional topping could be Super Fat’s keto chocolate sprinkles!
