Healthy Crockpot Creamy Chicken And Wild Rice Soup

Perfect for the cooler days ahead!

Ingredients:

1 Red Onion, diced (BRAND: Purple bag - Aldi)

2 Medium Carrots, diced (BRAND: Cal Organics - Aldi or Golden Harvest)

3 Ribs Celery, diced (BRAND: Taniura & Antle - Aldi)

4 Cloves Garlic, minced (BRAND: Little Salad Bar - Aldi)

6 Cups Chicken Broth (or stock) (BRAND: Simply Nature - Aldi)

1 lb Chicken Breasts (BRAND: Simply Nature - Aldi)

1 cup Uncooked Wild Rice (BRAND: Simply Nature - Aldi) *Substitute Quinoa or Brown Rice based on food sensitivities!

8 oz Mushrooms, sliced (BRAND: Wild Harvest - Trigs, Golden Harvest or other health food stores)

1 tsp Dried Thyme (BRAND: Field Day - Golden Harvest or other health food stores)

1/2 tsp Dried Rosemary (BRAND: Wild Harvest - Trigs, Golden Harvest or other health food stores)

1 tsp Pink Himalayan Salt (BRAND: Wild - ORGANIQUE or online)

1/2 tsp Pepper (BRAND: Thrive Market - Thrive Market online)

1 cup Full-Fat Canned Coconut Milk (BRAND: Native Forest - Golden Harvest or other health food stores)















Instructions: (for crock pot)

STEP 1: Combine all ingredients, except for the coconut milk, to the bowl of your crock pot, cover and cook on low 6 to 8 hours.


STEP 2: Once the rice is done cooking, shred the chicken and mix in the coconut milk. Top with fresh thyme and serve!
