A healthy snack!
Ingredients:
3 oz raw pecans
3 oz Medjool dates, pitted
1 tbsp ground flaxseed
1 tbsp cacao powder
1 tbsp raw honey
2 tbsp almond butter
½ cup shredded unsweetened coconut
Instructions:
In a food processor, add the pecans, Medjool dates, ground flaxseed, cacao powder, honey and almond butter.
Process for 2-3 minutes, or until the mixture is well combined and sticky.
To form your energy balls, take about 2 teaspoons of mixture and shape each one with your clean hands.
Then, roll each ball in shredded coconut.
To store longer term, refrigerate for about a week or freeze for 2 months.
