Healthy Energy Snack!

A healthy snack!

Ingredients:

  • 3 oz raw pecans

  • 3 oz Medjool dates, pitted

  • 1 tbsp ground flaxseed

  • 1 tbsp cacao powder

  • 1 tbsp raw honey

  • 2 tbsp almond butter

  • ½ cup shredded unsweetened coconut

Instructions:

  1. In a food processor, add the pecans, Medjool dates, ground flaxseed, cacao powder, honey and almond butter.

  2. Process for 2-3 minutes, or until the mixture is well combined and sticky.

  3. To form your energy balls, take about 2 teaspoons of mixture and shape each one with your clean hands.

  4. Then, roll each ball in shredded coconut.

  5. To store longer term, refrigerate for about a week or freeze for 2 months.
