A family favorite!
Ingredients:
*1 large Sweet Potato, chopped (BRAND: Unknown - Aldi) *Fresh
*1/4 Cauliflower, cut into florets (BRAND: Tanimura & Antle - Aldi)
*1 small Red Onion, chopped (BRAND: Unknown - Aldi) *Purple bag of 6
*1 tablespoon Avocado Oil (BRAND: Simply Nature - Aldi)
*1/2 teaspoon Chili Powder (BRAND: FreshJax - Organique or online)
*1 teaspoon Ground Cumin (BRAND: Field Day - Golden Harvest or any other health food store)
*1/2 teaspoon Paprika (BRAND: Penzey's - Online)
*1/2 teaspoon Garlic Powder (BRAND: Field Day - Golden Harvest or any other health food store)
*1/2 teaspoon Oregano (BRAND: Field Day - Golden Harvest or any other health food store)
*Pink Himalayan Salt (to taste) (BRAND: Foods Alive - Organique or online)
*Pepper (to taste) (BRAND: Wild Harvest - Trigs or other health food stores)
*1/2 cup Black Beans (BRAND: Simply Nature - Aldi)
*1/2 cup Shredded Cheese (BRAND: Follow Your Heart - Golden Harvest or any other health food store)
Ingredients For Toppings:
*Chopped Cherry Tomatoes (BRAND: Sunset Wild Wonders - Aldi)
*Sliced Avocado (BRAND: Organic Avoterra - Aldi)
*Jalapeños (BRAND: Freshire Farms - Aldi)
*Sour Cream (BRAND: Forager - Golden Harvest or any other health food store)
Instructions:
*Preheat oven to 350 degrees Fahrenheit and line a baking tray with parchment paper.
*Transfer sweet potatoes, cauliflower and onions into the prepared tray, drizzle with avocado oil and sprinkle with spices. Give vegetables a good toss and pop in the oven for 30 minutes.
*Take out from the oven and scatter over with beans, sprinkle with cheese and return to the oven for another 10 minutes, or until the vegetables are cooked through and the cheese is melted. Add the toppings, serve and enjoy right away!
