Ingredients:
1 pound Italian Sausage (BRAND: Never Any - Aldi) *For a replacement, use ground turkey (BRAND: Kirkwood - Aldi)
2 large onions (diced) (BRAND: Unknown - Bagged Red Onions - Aldi) *This time of year onions are sketchy with purity, so make sure to test/submit for purity testing, if desired!
1 tsp. Garlic Powder (BRAND: Field Day - Golden Harvest or any health foods store)
6 cups Chicken Broth (BRAND: Simply Nature - Aldi)
5 medium Sweet Potatoes (thinly sliced) (BRAND: Unknown - look for them in fresh produce section - Aldi) *For a sweet potato replacement, use cauliflower florets (BRAND: Tanimura & Antle - Aldi)
1 cup Heavy Cream (BRAND: Friendly Farms - Aldi) *For a non-dairy option, use a combination of Coconut Milk and Coconut Cream (BRAND: Native Forest - Golden Harvest or health food store)
2 cups Kale (washed, dried, and shredded) (BRAND: Simply Nature - Aldi)
Instructions:
*In a large pot, brown the Italian sausage.
*Remove the sausage and set aside.
*Add the diced onions to the pot and cook until softened, about 5 minutes.
*Add the minced garlic and cook and additional minute.
*Stir in the chicken broth and bring to a boil.
*Add the sweet potatoes and boil for about 20 minutes until sweet potatoes are fork tender.
*Add the kale and simmer for 2 more minutes.
*Reduce the heat to low and add the cream and cooked sausage.
*Stir to combine and serve.
For more flavor, add in salt, pepper, oregano, thyme and bacon (or turkey bacon)! Top soup with Follow Your Heart Shredded Cheese or Parmesan Cheese) and Red Pepper Flakes!
