Ingredients:
1 pound of Ground Turkey (BRAND: Kirkwood - Aldi)
2 tbsp of Avocado Oil (BRAND: Simply Nature - Aldi)
1 small Red Onion, diced (BRAND: Unknown (pack of 6) - Aldi)
1 small Red Pepper, deseeded + diced (BRAND: Sunset - Aldi) *Pack of 3
1 small Green Pepper, deseeded + diced (BRAND: Sunset - Aldi) *Pack of 3
2 cloves Garlic, minced (BRAND: Stonemill - Aldi)
2 14.5oz cans Diced Tomatoes (BRAND: Field Day - Golden Harvest or other health food stores)
1 15oz can Tomato Sauce (BRAND: Field Day - Golden Harvest or other health food stores)
1 tsp dried Basil (BRAND: Wild Harvest - Golden Harvest, Trigs or other health food stores)
1 tsp dried Oregano (BRAND: Wild Harvest - Golden Harvest, Trigs or other health food stores)
1 tsp Pink Himalayan Salt (BRAND: Wild - Organique or online)
1 tsp Pepper (BRAND: Thrive Market - Thrive Market Online)
2–3 cups beef broth, depending on how thick you want it to be (BRAND: Simply Nature - Aldi)
3 cups Quinoa (BRAND: Simply Nature - Aldi)
Instructions:
*In a large pot or dutch oven, heat 1 tbsp olive oil over medium high heat. Add your meat and break up with wooden spoon. Once cooked, drain the meat.
*In the same pan (without the meat), heat remaining olive oil over medium high heat. Add onion and peppers and cook until soft, about 5 minutes.
*Add in garlic and cook for a minute.
*Stir in diced tomatoes, tomato sauce, and parsley. Then add the meat back in.
*Stir in spices and broth. Let simmer over low for 20 minutes, stirring occasionally.
*In the last five minutes, add in quinoa. Stir. The heat will cook the rice.
*Serve and enjoy!

I made this but used brown rice instead of quinoa. It was delicious. Made this a couple of times. Love the soup recipes. Big soup eaters and don’t have to cook everyday!
The instructions say in last five minutes, add in frozen cauliflower rice. Will this work adding the quinoa at this point?
