Lasagna Soup


Ingredients:

*1/2 lb Ground Beef (BRAND: Simply Nature - Aldi)

*1/2 lb Ground Spicy Italian Sausage (BRAND: Never Any - Aldi)

*1 Red Onion (BRAND: Unknown - Aldi) *Bag of six

*3 Garlic Cloves (BRAND: Little Salad Bar - Aldi)

*2 14 oz cans of Diced Tomatoes (BRAND: Field Day - Golden Harvest or other health food store)

*1 jar of Tomato Sauce (BRAND: Field Day - Golden Harvest or other health food store)

*4 cups Veggie Broth (BRAND: Simply Nature - Aldi)

*2 tbsp Tomato Paste (BRAND: Field Day - Golden Harvest or other health food store)

*1/4 cup Heavy Cream (BRAND: Friendly Farms - Aldi)

*1 tsp Dried Oregano (BRAND: Field Day - Golden Harvest or other health food store)

*1 tsp Dried Parsley (BRAND: FreshJax - Organique or online)

*3 cups Pasta (BRAND: Tolerant - Golden Harvest or other health food store) *Sometimes Simply Nature at Aldi has a lasagna noodle!

*Add Pink Himalayan Salt (to taste) (BRAND: Foods Alive - Organique or online)

*Add Pepper (to taste) (BRAND: Wild Harvest - Trigs or other health food store)

*1/2 cup Dairy-Free Shredded Mozzarella (BRAND: Follow Your Heart - Golden Harvest or other health food store)

*1/4 cup Dairy-Free Parmesan Cheese (BRAND: Follow Your Heart - Golden Harvest or other health food store)

*Basil (for garnish) (BRAND: Unknown - Aldi) *Fresh

*Avocado Oil (BRAND: Simply Nature - Aldi)


Instructions:

In a large soup pot, heat avocado oil over medium heat. Add your meat and sauté until fully cooked through, then remove from pan. Add your 1 chopped red onion and sauté for 5-6 minutes, then add in your garlic and sauté for another 2 minutes. Add diced tomatoes, tomato sauce, veggie broth, tomato paste, heavy cream, oregano and parsley, stir well to combine. Add your meat back in. Bring soup to a light boil and add in your pasta, cover and cook through until pasta is al dente (about 15 mins). While your pasta is cooking in the soup, mix the dairy-free mozzarella and dairy-free parmesan into a bowl and set aside. Test your pasta for doneness (should be al dente). Serve in a bowl with a scoop of your cheese mixture and garnish with basil. ENJOY!
