Peppermint Bark Recipe

A holiday favorite!

Ingredients: *1 cup Raw Cacao Nibs (BRAND: Foods Alive - Organique or online)

*1/2 cup Raw Almonds (BRAND: Foods Alive - Organique or online)

*1.5 cups Coconut Oil (BRAND: Simply Nature - Aldi)

*12 drops Vanilla Creme Stevia Liquid (BRAND: SweetLeaf - Organique or online)

*2 drops Peppermint Essential Oil (SUB Peppermint Stevia) (BRAND: Rocky Mountain Oils - Organique or online)


*Dash of Pink Himalayan Sea Salt (BRAND: Foods Alive - Organique or online)

* Peppermint Ice Chips (BRAND: Ice Chips - Organique, Golden Harvest or online)

Instructions:

*Melt coconut oil in medium saucepan over low heat.

*Add stevia, vanilla (if using unflavored stevia), peppermint extract (or essential oil), and sea salt. Mix well.

*Coarsely chop almonds and cacao nibs in food processor. Fold into melted coconut oil mixture.

*Pour mixture onto parchment-lined cookie sheet. Put in freezer long enough for it to solidify. Top with Peppermint Ice Chips.

*Break apart and enjoy, but store bark in the freezer for best results!
