Ingredients:
2 tbsps avocado oil
2 tbsps high-quality balsamic vinegar
1 tbsp raw honey
Pink Himalayan sea salt and ground black pepper (to taste)
1 lb ripe garden tomatoes
1 small red onion, thinly sliced
1/2 cup dairy-free crumbled feta
1/2 cup pitted green olives
2 tbsps fresh chopped parsley or basil leaves
Instructions:
In a small bowl or jar, whisk the oil, balsamic, honey and a generous pinch of sea salt and pepper.
Slice your tomatoes as desired and very thinly slice your red onions, then arrange them nicely on a platter as shown.
Drizzle with your balsamic dressing, then top with crumbled feta, olives and fresh herbs.
Enjoy immediately, or cover and serve within 2 hours.
