Sliced Garden Tomato Salad

Here comes the sun! Nothing radiates warm weather + sunny vibes more than a bright red big, beautiful garden tomato. @cleanfoodcrush


Ingredients:

  • 2 tbsps avocado oil

  • 2 tbsps high-quality balsamic vinegar

  • 1 tbsp raw honey

  • Pink Himalayan sea salt and ground black pepper (to taste)

  • 1 lb ripe garden tomatoes

  • 1 small red onion, thinly sliced

  • 1/2 cup dairy-free crumbled feta

  • 1/2 cup pitted green olives

  • 2 tbsps fresh chopped parsley or basil leaves





Instructions:

  1. In a small bowl or jar, whisk the oil, balsamic, honey and a generous pinch of sea salt and pepper.

  2. Slice your tomatoes as desired and very thinly slice your red onions, then arrange them nicely on a platter as shown.

  3. Drizzle with your balsamic dressing, then top with crumbled feta, olives and fresh herbs.

  4. Enjoy immediately, or cover and serve within 2 hours.
