Snickerdoodle Cookie Dough Pumpkins

The cutest pumpkins!



INGREDIENTS:

  • 1 cup almond flour

  • 1/4 cup plant protein

  • 1/2 cup cashew butter

  • 1/4 cup pumpkin purée

  • 1 teaspoon pumpkin pie spice

  • 1/4 teaspoon cinnamon

  • 1-2 tablespoons maple syrup, as desired

  • cinnamon "sugar" (cinnamon and xylitol, monkfruit, stevia or other non-sugar sweetener)

  • dark chocolate chips


DIRECTIONS:

  • Combine almond flour, protein, cashew butter, pumpkin, spices and maple syrup. Chill batter for 10 minutes, then roll into balls & shape into pumpkins using a toothpick. Roll in cinnamon sugar & add a chocolate chip on top for the stem. Enjoy!
