Meal prep and enjoy for the week!
Ingredients:
*2 large Sweet Potatoes (BRAND: Unknown - Aldi) *Fresh
*1 pound Grass-Fed Ground Beef OR Ground Turkey (BRAND: Simply Nature - Aldi OR BRAND: Kirkwood - Aldi)
*1/2 Red Onion (BRAND: Unknown - Aldi) *Bag of 6
*1 can Black Beans, drained and rinsed (BRAND: Simply Nature - Aldi)
*1 can Diced Tomatoes (BRAND: Field Day - Golden Harvest or any other health food store)
*Taco Seasoning (to taste) (BRAND: FreshJax - Organique or online)
*Avocado Oil (BRAND: Simply Nature - Aldi)
Toppings:
*Dairy Free Cheese (BRAND: Follow Your Heart - Golden Harvest or other health food store)
*Cilantro (BRAND: Tanimura & Antle - Aldi)
*Sliced Avocado (BRAND: Organic Avoterra - Aldi)
Instructions:
Step 1: Add ground beef or ground turkey to a pan with taco seasoning and avocado oil - cook over medium heat until fully cooked through.
Step 2: Set aside.
Step 3: Cut up sweet potatoes into small pieces, the smaller the pieces, the easier it cooks.
Step 4: Add sweet potato to an avocado oil lined pan with black beans, green chilis, onion and diced tomatoes.
Step 5: Mix, cover and simmer on medium heat for 15-20 minutes, until sweet potatoes are soft.
Step 6: Once sweet potatoes are soft, add ground beef or turkey to mixture and mix together.
Step 7: Divide into four meal prep containers.
Step 8: Top with cheese, cilantro and avocado (add avocado day of, before eating, so it doesn’t brown).
