Stuffed Zucchini Boats

Save this for when you need an easy, weeknight dinner! Easy, delicious & packed with protein!

Ingredients:

*3 Zucchinis (BRAND: Simply Nature - Aldi)

*2 tbsp Avocado Oil (BRAND: Simply Nature - Aldi)

*1/2 Red Onion (chopped) (BRAND: Unknown - Aldi) *Pack of 6

*1 large Bell Pepper (chopped) (BRAND: Sunset - Aldi)

*3 Italian Sausages (BRAND: NeverAny - Aldi)

*3-4 cloves of Garlic (minced) (BRAND: Little Salad Bar - Aldi)

*1 can Diced Tomatoes (BRAND: Field Day - Golden Harvest or other health food store)

*1/2 tsp. Pink Himalayan Salt (to taste) (BRAND: Foods Alive - Organique or online)

*1/4 tsp. Pepper (to taste) (BRAND: Wild Harvest - Trigs or other health food store)

*1/4 tsp Paprika (to taste) (BRAND: Wild Harvest - Trigs or other health food store)

*Oregano (to taste) (BRAND: Simply Nature - Aldi)


Topping Ingredients:

*Dairy-Free Mozzarella (BRAND: Follow Your Heart - Organique, Golden Harvest or other health food store)


Instructions:

*Pre-heat oven to 350 degrees Fahrenheit.

*Heat avocado oil in a large pan, then add onion and bell pepper. Sauté over medium-high heat until the onions are translucent.

*Add Italian sausage to the pan and brown meat.

*Add in garlic, seasonings and diced tomatoes. Simmer on low heat for 10 minutes.

*Cut stem off zucchinis, slice in half and hollow them. DO NOT HOLLOW TO THE VERY TOP OR BOTTOM.

*Add zucchinis to a large baking dish, season them with salt and pepper, fill them with the sausage mixture and top off with shredded, dairy-free cheese.

*Bake for about 25 minutes, or until cheese starts to brown. Enjoy!

This was worth making. Yummy. I cheated though so instead of hollowing out the zucchini, I cubed it and just tossed everything together.
