A super nourishing and amazing soup for post holidays!

Ingredients:
*2 tbsp Avocado Oil (BRAND: Simply Nature - Aldi)
*1/2 cup Red Onion (BRAND: Unknown - Aldi) *Bag of 6
*1 lb Sweet Potatoes (cut into cubes) (BRAND: Unknown - Aldi)
*2 tbsp Garlic (minced) (BRAND: Stonemill - Aldi)
*1 tsp Italian Seasoning (BRAND: Field Day - Golden Harvest or other health food store)
*1 tsp Pink Himalayan Salt (BRAND: Foods Alive - Organique or online)
1 tsp Pepper (BRAND: Wild Harvest - Trigs or other health food store)
*2 cups Kale (BRAND: Simply Nature - Aldi)
*2 15 oz cans Great Northern Beans (BRAND: Wild Harvest - Trigs or other health food store)
*2 13 oz cans Unsweetened Coconut Milk (BRAND: Field Day - Golden Harvest or other health food store)
*2 cups Vegetable Broth (BRAND: Simply Nature - Aldi)
Instructions:
Heat the avocado oil in a large pot over medium-high heat. Add in onion and sweet potatoes, and cook for 5 minutes while stirring. Add in garlic and seasonings, and cook for 1 more minute. Stir to combine the kale for 3 minutes, or until slightly wilted. Stir in the beans, coconut milk and broth. Bring to a boil, then reduce heat to low and simmer for 5 minutes, stirring occasionally.

It was very good. I added two different kinds of beans to mine.
I just made this soup and it's so delicious I did add chicken sausage to it as well!! Yummy!!!
