This simple meal has few ingredients, takes about 10 minutes to make and gives you a healthy dose of cruciferous veggies, which we know are great for our health.
Ingredients:
2 bags of shaved brussels or 1lb of loose brussels
2 tbsp avocado oil for sautéing
1 container hummus
Dijon mustard
1 lemon
1 jar capers
1 bulb garlic
Vegan Caesar Dressing to mix in bowl:
1/4 cup hummus
1 tsp dijon mustard
3 tbsp lemon juice
2 tsp capers chopped or whole
3 tsp caper juice
3 tbsp minced garlic
Salt + pepper to taste
You can also add some hot water to thin out the dressing and make it go further.
Instructions:
If not shaved, shave the brussels with a mandolin.
Once shaved, warm up brussels over medium with 2 tbsp olive oil until browned.
Add the caesar dressing and combine.
Serve!
